The Restaurant Manager is in charge of the entire outlet assigned to him/her and is the direct leader of the Captains, Waiters/Waitresses and Hosts/Hostesses assigned to work in the outlet. He/She co-ordinates closely with the Kitchen, Bar, Stewarding, Housekeeping, Engineering, Accounting, Laundry and Human Resources Departments. He/She takes all the necessary steps in relation to the well-being of his/her team in conjunction with the Human Resources Department. He/She establishes all schedules (monthly work rosters, days off, annual leave and training, etc.) for and concerning the members of his/her team in a timely manner and will discuss all schedules with the Western Section Head before implementation.

- Creates and maintains excellent rapport with the Chef to whom he/she makes clear, concise and objective comments and recommendations as to how to achieve improvements of the food quality, the efficiency of the service and thereby ensuring the continuous success of the Restaurant. The Restaurant Manager attends all food presentations and tasting with his/her team members and volunteers constructive criticism on the presentation and the taste of the food items being presented. To create a highly motivated team he/she will lead by example which will result in the achievement of sustained excellence in service, customer loyalty and ultimately in positive financial results for the Hotel. He/She will establish excellent rapport between him/herself and the members of the team to ensure an aura of professionalism and self actualization for all.

- The Restaurant Manager will prepare all appraisal forms in writing and discuss such appraisals on individual basis with each member of the team clearly pointing out the achievements and the shortfalls of each individual who will have to sign their performance appraisal forms once they have been discussed. The fact that the Restaurant Manager is totally familiar with all the standards, the rules and regulations in the Staff Hand-book and the individual the assessment can be held in an open, fair and professional manner and any necessary reprimand/suggestion for improvement frankly discussed with the individual.

- The Restaurant Manager must train all employees and identify those with potential for any appropriate promotion which will ensure the maintenance of standards for the operation and the renewal of the team from within.

- He/She will establish, implement and maintain a proper preventive maintenance programme for the Outlet so as to enable the Engineering and Housekeeping teams to follow-up on a weekly basis. He/She will assist the Chief Steward in the training of the restaurant team on equipment cleanliness, care and proper storage to avoid any breakage and losses.

The Restaurant Manager will assist all members of his/her team in all operational challenges, activities, changes to standards, etc. and guides, coaches and leads all employees toward achieving their individual talents. Maintains excellent guest relations at all times.
餐厅经理须帮助他/她队伍中的所有成员在操作中的挑战与行为等变成标准,并且还须引导、训练和领导所有的员工发挥他们的才能。始终与客人保持良好的关系。
- The Restaurant Manager will establish the operational budget for his/her outlet in a timely manner and discuss such budget with the Western Section Head before the budget is submitted. He/She will monitor the budget on a daily basis, alert the team of extra sales efforts needed in the form of up-selling, the ‘pushing’ of specials not only to achieve the budget but to exceed it. He/She will communicate any and all ideas on how to create additional revenue to the Western Section Head as well as any ideas of how reduce food and labour costs. He/She will ensure that all team members are totally familiar with the figures and that they too take an active interest in the financial results of the outlet.

- He/She will be totally familiar and conversant with the menu, the ingredients used and the method of cooking applied for each dish and all the specials on offer for the day which he/she will pass on to all members of the team on a daily basis during the pre-service meeting when he/she will also inform on the items which need ‘pushing’ , are not fresh, not available or sold out or if the preparation method for certain items had to be changed and the reason for the change. He/She will also inform all team members of items which are not on the menu but available from the kitchen.

- He/She will have a good knowledge of the wine list and the general characteristics of the wines listed. You will check with Beverage Manager regarding wines & beverages which need pushing, vintages which have changed and wines which are sold out. To ensure the beverage budget is meet monthly you are to work closely with the Beverage Manager on monthly beverage promotions. He/She will also train all team members in beverage knowledge other than wines and help the staff in their selling techniques also for drinks both alcoholic and non-alcoholic, juices etc.

- He/She must be totally familiar with all safety and security standards and ensure the well-being of all the Restaurant staff and guests.

- From time to time, He/She will be asked by the Western Section Head to perform other duties and assignments and possibly assist on her behalf in other departments or outlets.
